Terroir & vinification

Argilo-limestone soils and limestone marls in the foothills of the Cévennes. Different plots in the vineyard are chosen for the best grapes. A two-week maceration, then gentle extraction throughout the fermentation process (under 28°C) results in the varietal aromas being fully expressed, and a finesse on the palate.

Tasting

A pale ruby hue, on the nose there are cherry, redcurrant and peppermint hints; on the palate, it has wonderful sweet cherry fruits, a lively balanced acidity, soft tannins and notes of violet and mint.

Food matches

This wine is perfect with charcuterie, and with goat’s cheese.

Serving

To be served at 16-18°C.
